The Monaros (the Vauxhall badged ones anyway) have a matt leather interior which I quite like and would like to keep like that.
Unfortunately, being a matt finish, the slightest thing seems to make it shiny.

Anything I can use on the seats that anyone knows of to protect or at least bring back to original state when I eventually & inevitably bugger it up?

I've generally found that the Megs Stage 1 & 2 leather care kit is very good for cleaning and maintaining the leather. Having a cab, I often used to find splattered bird shyte over the seats, and this would stain very quickly.

I also got one of Megs soft all purpose interior brushes to clean between the stitching and this helped get rid of stubborn stuff, before apply the cleaners.

You could try some saddle soap which is used for cleaning horse tack etc, worked well on the house sofa and is cheap.

Dont know about Fords, but Volvo do a leather care kit for their cars,
