To "stroke" an engine is to extend it's stroke..
We have a 350 block in the dragster running with the stroke from a 400 which gives us a "383 Stroker"..

As others mention, its the "other" way of increasing capacity.
In this instance, instead of opting for a larger bore size, which isnt an easy option with an LS1/LS6 block, they opt for a longer stroke crank to increase capacity. This will require matching pistons too.
Although strictly speaking, the 383 will have a +0.005" hone.
382 would be using a standard bore size, which is what I did.
But usually comes as a kit, crank rods and pistons. Rods shouldnt strictly speaking be necessary, but GM used a stupid 0.944" gudgeon pin, that virtually no aftermarket company uses for their pistons.
They all revert back to the SBC 0.927 pin, which means once you are using rods that size, there are hundreds of piston variations to choose from, for sensible prices.

There has been extended discussions on this topic and there are many variables. Basically they give the same power.
There are things like less friction from more stroke, but better breathing with a larger bore due to less valve shrouding etc. Somewhere around Square is good and long rods to reduce side loading. Plus less piston velocity and engine stress from less stroke etc, etc ad infinitum.
LS1 is 3.62 x 3.98 from memory. 383 Stroker takes it to 4 x 3.98, 402 is LS2 Block with 4 x 4.
I think you want the largest you can get of each within reason.
Some guys run 394(?) LS1's with a 4.1 stroke, but I think they are pushing the limits normally by their own admission.
