The manufacturers noise ratings should be seen as a guide - it's hard to accurately make the exhausts have the same level and I've seen the exact same exhaust setup on different cards read completely different. For example, a new echaust will generally be louder (and tinnier) than an old one thats got carbo build up inside.
The best plan is just go along to the nearest easytrack/bookatrack/etc trackday and ask the organisers to test the car. You don't have to do the trackday and all of them will be happy to do this (as far as I know).
