Someone has done this on my Tam at some point and now it isn't inline with the other pedals and it doens't have a long enough throw anymore.

How do you go about winding that bar out, since as far as I can see, winding out of one socket winds it into the other...

Take the spring (c) clip off the pedal and remove the bar that holds the rod onto the pedal and then set it to the length you desire. There are two holes in the clutch pedal. The top one makes the pedal travel shorter the bottom longer.

Are you getting clutch drag. If so it could be the clutch, slave cylinder or master that need fixing / replacing.
