Sag temperature readings explained for a newbie.

All those temperature readings, PSI's etc look ready cool on my speedo readout, but would someone mind explaining what they all mean and more importantly what i should be looking out for.
i.e.
At what temperature is the engine warm ? (fun time
) and at what degree's is it too hot ?
Also the oil pressure, what should i be looking for ?
Is it normal for the water temp to go to 95/96 whilst idling in traffic?

Apparently engine oil temperature has to be over 80 degrees before attempting anything over 7000rpm, which I was surprised to hear - although conditions at this time of year don't really favour that task anyway
. For the record I usually wait till oil temperature is over 50 degrees before making heady 'progress'

95/96 degrees for water temp in traffic sounds normal for me, I would start worry if it crept over 100 and stayed there (fans usually kick in around 100 IIRC).
Oil pressure varies between 40-70 for me and TBH I'm not sure what it should be. Hopefully someone who knows what they're talking about will be along shortly
