How can you get a straight six engine checked over ?

Like any purchase there is an element of luck / risk involved - however you can get the car checked over by a reputable garage and do a compression test on the engine, check history and service intervals.
Pay a bit more and buy one which has had an engine rebuild and is still within warranty.

Good question and one I'd love there to be a simple answer to as we are moving to NZ in a year and I plan on taking mine with me.
Have no reason to suggest the engine has any issues but once down there if she did blow would be a proper ball ache to buy an engine, ship and get installed down there!

Have you thought about how you will keep her maintained once over there? Jim who is from the UK and is the NZ TVRCC chap also runs KW Historics specialising in Lotus and TVR and has a good history working with TVR's for almost 30 years, part of which was here in the UK (11 years) and the rest over there.
Before making contact there was no way I was taking her but he comes highly recommended, knows his stuff and is a very nice chap from the correspondance we have had so far.
