V8V cooling fans behaviour

I recently passed 1 year ownership of my N420.
But a recent thread on DB7 cooling fans made me realise I don't think I recall the fans in mine spinning, ever. Are they known to be engaging only at very high temperatures and/or when AC in blowing at full speed at 16°?
The car is just fine, coolant temp gauge is always nicely sitting at middle when warmed up (so no thermostat trouble), no overheating, no OBD codes, the car just came out of service, I recently cleaned the engine bay and nothing strange in the fan/radiator area, so I have no reason to believe anything is wrong, I just find it weird. And it's not like I live in Norway, here in Northern Italy we reach 30° easily in summer.
