Coolant flush - Forester

Ok have picked up my new (to me) Forester 2004 xt. First job is to flush the coolant. Which antifreeze is recommended? Also is it an easy job?
Looks like it is simply removing the cover under the car and finding the drain (in the manual it looks like it is on the hose at the bottom of the rad). Then filling up the rad to the level and then the expansion tank?
