I seriously tempted by one of these. I'm looking at getting a 2.5d or 3.0d auto but it will probably have 100k+ on the clock but at this age I presume most will be motorway cars.

What should I be looking out for when buying?

As the 1st and current owner of an E61 535d with 127k currently on the clock (3 yrs 2 months) . Yes, mine does 378 mile motorway stints. I'd say :

Roofbars/Doortrims - look for bubbling under the black coating
Inlet manifold - the baffles in these can break down (I had mine replaced under warranty at about 90k miles)
Tailgate - does it lift all the way up - if not new struts reqd
If it has an exhaust particle filter, check out the cost of a new one if its close to end of life (c. 120,000m)
Interior trim - check condition of steering wheel spokes, centre console button - black finish can lift & peel.
Thats about all in my experience; just don't be tempted to put cheap tyres on it, they really don't appreciate them.
