The wipers on my `03 2.5 Z4 have been playing up.

Every once in a while they freeze up, and won't restart until I've pulled in, and turned the engine off and back on. Today it happened on the motorway during heavy rain, and I had to pull into the hard shoulder. Not good!

I've booked it in to have the whole wiper motor replaced next thursday, which means no driving in the rain until then. Another symptom seems to be when I pull the wiper stalk down for a single wipe, it will wipe for 30 seconds or so, and often seize up after that. Has anyone encountered this before?

All I would say is that it may not necessarily be the wiper motor itself. The motor is controlled by two relays in the fuse box (behind glovebox), one can be replaced and the other is part of the fuse box. There was a technical bulletin about the replacable one being incorrectly manufactured at one point, so I would definitely replace this first then retest.
This sounds like a park contact fault and although the park contact switch is in the wiper motor itself, it grounds through the relay.
