Commuter bike advice

Whats a good long legged commuter bike based on the following for a 60 mile round trip commute, mainly on dual carriageway for the better months of the year?

Good 40+ mpg
Decent size tank/range
Comfort
Reliability
Easy to ride
2-2.5k to buy

Not too bothered about performance as all should be quicker than a car.
Had a Honda VFR recommended but I'm not sure what it's like for economy, and experience out there?

Id have thought something like a Suzuki GS500 would meet your criteria. You can get one new for around £2800.

Is a 500 enough for a relatively long commute? What sort of range is it reasonable to expect from it?
