In the winter lay up i want to polish my plenum and rocker covers, would you use a Dremmel, and what attachments would you use. Also would you seal them after polishing?

You'll find the rockers relatively straightforward as they are of a pretty decent quality alloy.
I'd use a mop atachment on a power drill and the dremel only for the fine detail or you'll be there all day. I know dremel do various polishing compounds and felt discs etc.

The plenum cover will be a lot more hard work as the casting is so poor. The surface is very rough and pitted and I think you'll struggle to get a smooth finish without some industrial gear. I didn't bother with mine - gave it a good clean and buff as was able by hand. An alternative is to powder coat it.

Thanks for the compliment Chris,
It took about 4 hours from start to finish including removal and refit,
I started with a D.A sander with varying grades of disc, then polished with a kit I got from ebay.
I also polished other bits too
If you are thinking of doing this then please invest in a decent mask as aluminium dust is deadly if inhaled.

Rob, it looks like you have polished the Y-piece. What did you use to do this as the result looks great?
