I had a similar problem a while back. The veneer dash was all cracked on my Griff and I wanted a new one. I was at Willow Sports Cars in Newark and they have some lovely laser cut aluminium ones for the Chimaera. Nick is a good chap and he machined one for my Griff. I am very happy with it and it was very reasonably priced. I hope the photo has uploaded OK.

If you're thinking of Carbon fibre, you have two options.
I bought real CF and bonded it on, cut it out, etc.
Looks excellent, especially on the upper section where the instrument bezels cover the cut edges. In the lower section, I have to be very careful with the cutting - the fibre 'splits' for a mm or two where I cut it and so I cut holes smaller and then filed away. Looks great but actually slightly imperfect.
Others have (and I might if I did it again) gone down the 3M carbon fibre lookalike adhesive. A hundred times easier to work with, cheaper, etc. I haven't seen one of these in the flesh but I know you can get them in a variety of colours (silver, grey, black, etc.) and reports are good.
Its actually quite an easy job to do.

I used wrap too lovely stuff to work with no bubbles and about a tenner IIRC 
I used carbon wrap - cleaned off all the veneer and glue (you have to have perfect surface as slightest grain will show) - it was easy to apply and looks great.
I then went a step further and removed that carpet on the door panels and smoothed them and did them in carbon wrap too - looks amazing. Slight gaps caused around the edges were solved by using a bit of black draught excluder (foam stuff) - looks much much better than the carpet version - again the whole thing cost about 10 quid - oh and i also did the ashtrays in carbon wrap also - easy with a hairdryer or heat gun. I used black carbon wrap - the brushed alloy instrument surrounds look great - the less are perfect - even the triangle ones were easy to get right.
