Speedo interface box. Thoughts about replacement?

My Chim has started doing that thing where it stalls at junctions out of the blue.

I've been reading a bit about the possible causes and I'm strongly suspecting an electrical fault. Something is killing either fuel/spark. It's not the stepper motor.
I've been reading about the research done by other members on the box that takes the speed sensor input and converts the signal to pass onto the ECU and how it's electrically a bit marginal.
Has anyone had a go at replacing this box with a little breadboard computer. (Like this: https://www.adafruit.com/product/1501 )
We could use the GPIO pins to take a dirty signal from the speed sensor, clean up the signal with some software and output a clean signal to the ECU.
Would this not solve the issue one and for all, whilst also giving us a second ECU behind the dash for 'future use'.
Any reason why this wouldn't work? I write software for a living. I know a reasonable amount about signal processing but not a lot about electronics!
