I'm getting a fairly loud knocking sound from the rear of the car.

It happens every time there's a reversal of torque - i.e. every time I apply power after decelerating in gear, and every time I take my foot off the power after accelerating in gear. Every time it knocks just once.

I'm suspecting the diff bolts have come loose, and the diff is rotating slightly every time the torque through the prop shaft reverses direction. Does that seem a likely explanation?

CV joints
Mrs Oxgreen not liking your jerky movements.

Could be any of those.
It needs to go to your specialist, up on the ramp for an accurate diagnosis IMHO.

In my car it was worn CV joints, as the Mrs refuses to travel in the boot getmecoat

Can I also add roll bar drop links...in particular if they are the rose joint type.

Mine was the four cap bolts that secure the steel rear mount to the GKN diff.

A few threads loose and the clink was very noticeable. A bugger to tighten due to poor access.

If it is these, they need torquing properly, about 30ftlb iirc.
