It was reading low a few weeks ago, then it started working fine, now it doesn't move at all. The coolant level is ok and the fans cut in and out exactly as before, so I'm thinking its the sensor or the gauge.
Anyone got any suggestions as to what to try first ? (Not exactly sure where the sensor is).

Assume you mean the temp gauge.

If its intermittant my guess would be a wiring fault. The sensor is high up at the front of the engine, just behind the distributor. You should find two sensors, the one with the fancy sealed connector is used by the ECU and the other one is used for the temperature gauge. I would check the wire for damage close to the sensor.

Turn the ignition on, earth the wire you take off the sensor, if the gauge moves then the sensor is knackered. Do not leave the wire connected to earth longer than needed to see if the gauge moves.
