Are you experiencing any running problems or strange noises with the engine?. I have never owned an X300 so any knowledge I have is of the earlier XJ40 model, but they are similar and the engine in the X300 is an updated version of the XJ40's engine. On an XJ40, the oil pressure sender can be unreliable leading to a false low oil pressure reading on the dial and turning on the oil light. Genuine oil pressure problems are very rare on the XJ40 and I suspect this is also the case with the X300 since the engine is basically similar, and if anything even more robust. I think it is more likely you have a sender problem rather than a genuine oil pressure problem.
Before you determine the car is using oil, make sure you are measuring the oil parked on a completely level surface. With a Jaguar it is possible to get a false high or low oil reading on the dip stick depending whether the nose or tail of the car points down hill. If you measure the oil with the car pointing down hill you will get a different reading from if it points up. Some years ago I thought my XJ40 had used a lot of oil from making this mistake.
