With the X the newer you buy the less hassle, early production models y-52 plates had a number of problems (dripping windscreen washer jets, boot lock, prop whine, popping air vents, door locks) addressed by the 2003my car, From this point onwards the car build and reliability have been pretty good. I have had 2 2.5 sports (2003,2006) I average 24-25 mpg. The 3.0 is probably 1 mpg lower.
It is the same engine, the 3.0 getting to 60 much quicker, but top end very little difference 140-146 only in Germany.
The sport model does handle better IMPO than the SE (too soft). Be aware the X does like to eat the inners of the front tyres, this is not obvious unless wheels are on full lock.Jaguar have changed the track set up on later cars to stop the excessive tyre wear.
Also be aware of limited edition models, some appear with Sport body kit but don't have the sport suspension set up!

Based on personal experience - You'll get 30mpg out of a 2.5 Manual on a M-way run if you keep under 90. Auto's will struggle to make more than 28mpg over the same cycle.

I'd Stick with the manual - MTX75 box is very good.

Agree, about 25mpg hwy and 20 mpg city on average on my 3.0. Def get the 3.0 Sport, but make sure it has all the toys and full leather.

I've had two 2.5s and I'd agree with the previous posts. Next time I'd go for a 3.0 as it does have a bit more grunt - if I don't buy one of those sexy XFs first!
