The X300 and X308 were factory designations and are commonly used to differentiate between the two very different cars that shared the same XJ name. X300 1995-1997. X308 1997-2003. X350 2003 on.
I'd not worry about it. If all the numbers match on the registration document, and you are happy the car has not been written off, cloned or had a different chassis plate put on for any reason then the X300 you've seen on the plate may simply be a coincidence.
If you're new to Jaguar V8 ownership you might want to find out a bit more about the known problems occasionally found with the V8's and consider having some preventative maintainence done before you have a expensive mechanical incident.
