Cleaning the interior wood trim?

Afternoon,

I went to have a look at a Jaguar XK8 today and the wood trim seemed to have lost its gloss finish and colour.

How do I prevent from my wood trim from doing this, what do other owners do to clean and protect the wood finish in their cars.
