A Question About Brake Assist

I have a 2009 Scirocco and I've always found the brake pedal to be overly sensitive which makes if difficult to brake smoothly and gently and just about impossible to heel and toe. I know that within VCDS (VACOM) there is a way of changing "Brake Assist" but I'd like to know if this will have any effect on gentle braking or if this a way of adjusting the threshold at which the system recognises panic braking and applies maximum braking to trigger the ABS. I've seen conflicting views on this but hopefully someone (Dr G?) can give me the definitive answer.
