I think my S6 has a drink problem

As above, I think my C7 S6 has a drink problem. It seems to drink quite a bit of oil, 1 litre in 8k miles.

Is this considered "normal" for these cars or could this be a sign of a bigger issue?

I would say that sounds fairly reasonable to be honest. 1L per 1000miles and you have an issue.

That amount isn't anything to worry about unless it's alongside another symptom (leak, smell, warning light, lack of power etc.).
