What is the approximate cost of a body off resto on a Griff? Outriggers are fine and chassis will just need powdercoating. What other jobs are worth doing whilst it is in bits?

doing it yourself, or having it done.

for parts, i'd say the below are reasonable guesses

strip and shot blast chassis and all components 500
new bushes all round, with new bolts 400
wheel bearings , ball joints, etc 200
brake lines 120
fuel lines 100

How do you know the outriggers are fine if you haven't had the body off?

Budget about £3k plus vat excluding stuff you need to buy, wishbones, bushes etc (IMHO)

Whilst mine is in bits, I've had my diff inspected, gearbox rebuilt (due to problem engaging 4th gear - syncro) seat mounts added to the chassis, all the bushes, wishbones, pipes, clutch, bearings and stuff checked and the worn out stuff replaced.
