Found one reason why the Griff was running cold...

The old stat was opening at approximately 60 degrees!! (I guess the spring's gone weak over time?) No wonder she's been doing not much to the gallon and feeling listless. The huge alloy rad doesn't help matters here... 
Got the new stat in now, and the throttle response is much crisper - the ECU is now seeing a more civilised water temperature and stopping the car running like it's on a permanant warmup cycle.
Next problem is that the temperature gauge still doesn't see over 75 degrees and this is while the fans are on. Now I expect the fans to be on at the point of parking up after a good bit of excercise, so it should be a fault with either the gauge or the sender...
Maybe one day I'll have a Griff that behaves normally and doesn't try to freeze its engine!
What sort of range of resistance is the temperature gauge expecting from the sender? (And where can I get senders from? Lucas? )

Mine is always low reading checked it against fans coming on
is always 10* out you might try and look at the wire off the
sensor they have been known to have a resister fitted to make
people think that its not running hot aledgidly, mine had one.
my fans come on at 98 shows 85 on gauge only takes 4 miles for
fans to kick in round town never gets any hotter than that runs
at 65 to 70 on gauge on motorway.
