Too cold?

Just got back from 2-day 500-mile Madrid-Valencia-Madrid trip in the Griff (for a day's fun in single seaters on the Cheste race track near Valencia, highly recommendable). Average speed over the 500 miles 80-90 mph, but with prolonged bursts of considerably more. Ambient temps throughout between 15-20ºC. Normal engine temp on the open road in these ambient conditions would be around 80º, but I was a bit perturbed to note on this trip that engine temp was much lower, around 60º-ish and never exceeding 70º. Coincidentally (or not?) the air con decided not to work at all, despite having been thoroughly sorted by Dulfords on last major service in Sept. Apart from possibility of temp gauge suddenly playing up, what could these symptoms mean? Don't want to risk damaging anyhting if it's something more sinister. All suggestions welcome.
