Can a temperature sender just malfunction??

Ok, so I am still trying to fix my Griffith's temperature issues.
My temperature gauge is now reading around 95 at cruising, and 100 or so on acceleration, the fans come in and it comes down to 95 or so again.
I've bled the system totally and there is no air in it. I can let the car run statically, the temp goes up, fans come on for around 20 seconds and then off, no problems.
So far I've replaced the otter switch, themostat, and radiator (with a rad tec alloy rad), and the systems seems to be working properly.
Am I correct in concluding that my sender unit/gauge is just not reading right now?

Mine has thrown a wobbly twice in ten years so it's not uncommon.
It's not difficult to change (on a 98 500) but rather fiddly to do without taking the distributor out - helps if you've been trained as a gynaecologist........
Worth a try as your cooling system seems to be working fine.

The ECU has it's own sender.
The gauge has it's own too and then the otter switch to control the fan switching.
What I am trying to say is ,just because one is working ,the other may not be.....

Yep, I know there are 3 senders. I hear the pre-cat sender is different to the later ones?
I'm just trying to get to the bottom of the matter that the car is running hot all of a sudden. Drove back via the dual carriageway/motorway today, good mix of Town - 40mph-NSL roads.
Came off a 1.5 mile stretch of dual carriage way, no fans on - gauge showing 95 degrees/just below the little line on the gauge.
Cruising on the motorway - no fans on gauge 100 degrees
Accelerating to 5000rpm on motorway gauge goes just past the little line (I think this shows 100 degrees) fans kick in temp comes down to 95 ish on gauge.
40mph dual carriage ways accelerating away from roundabouts, gauge hovers around line, fans come on and off.
Town, fans on and off regularly.
When I checked the swirl pot next to the otter switch with a digital thermometer, it showed 101 degrees today, with the fans off. But I am slightly skeptical about this as the swirl pot is right above the exhaust.
Is there any certain way that I can test the actual temperature that the coolant is at?
I just don't remember the gauge ever getting to the line and the fans being on so much. 90% of the coolant system is new and the symptoms seem the same. Also I now have a perfectly good rad in my garage and a £500 odd hole in my bank account!
I am also slightly concerned that I am getting a wet hand from the exhaust when the car is revved (well I was yesterday). I don't appear to be losing water, but can't really tell yet.
I've done a compression test on all cylinders and they are all good.
It's been suggested that I have a leaking Valley gasket that could be getting water into the exhaust ports???

A laser fired at the block revealed the gauge was over reading by 7-8 degrees. Was running between 95 and 100 on the gauge.
Have now fitted 75 or 78 (can't remember which) degree thermostat and a discreet fan override switch under steering wheel panel for when sat in traffic.
Happy days temperature concerns are now a thing of the past.
Was warned this could mean under performance on cold winter days, however car will be in garage under blanket once the first frost arrives.
Should be a low cost and quick fix.
