05 freelander overheating

Help,
My mrs has an 05 freelander and was driving the other day, did about two miles and the temp gauge went into the red, she stopped opened the bonnet, all coolant was in the expansion tank and did not seem to hiss when cap was removed. She then drove off after letting it cool down, it then went to normal working temp and did not move.
Could this be a dodgy sensor or the start of something expensive
P.s. the day befor the car was driven through so quite large puddles, could water have got into the sensor?
