iPhone 5 Phone Book via Bluetooth 2007 RRS

I'm sure this has been covered a million times before, but please bear with me:
Just got a new iPhone 5 and it connects up fine and I can use it, but it is not displaying the contacts/phone book as it is displayed on the phone or as I want it to be. It also shows all the email addresses too.
I realise that I can go into 'Settings' and go to 'Mail,contacts, calendar' and then go to 'Contacts' and then it has 'Sort Order' and 'Display Order' which I have set both to 'First, Last'.
Also, if I go into 'Contacts' I have the choice of selecting either "iCloud, All iCloud" or "Hotmail, All Hotmail" or both. By selecting just iCloud it displays my phone book (on the phone) as I want it.
Have I lost you all yet?
Basically I want to know how do I replicate my phone book in the car as it is on my phone.
