Range Rover Classic Cooling Problem

I’ve just driven my 91 Range Rover Classic down to Switzerland. No problem getting here as I’ve got winter tyres on, which are great in the snow.
However, I have an issue with the cooling. The temperature gauge, when the engine is warm, is showing the engine temperature as closer to cold than normal (in the middle). When on the motorway, it goes down even further towards cold.
The low coolant light is flashing even though there is coolant in the header tank, between half and three quarters full when the engine is cold, which I have been told is okay. This could be a separate issue as one of the wires has come out of one of the connectors on top of the header tank. I have pushed it back in but I do not know how good the connection is. The light is not flashing all the time though it is probably flashing more often than it is off.
When I have been out and the engine is warm there is what I can only describe as a hot smell. It’s not a burning smell but something is definitely not right.
I was told by a Land Rover specialist in the UK to see if I can hold the top hose from the radiator, if it is too hot to hold then the engine is overheating. I can touch the top hose but it is too hot to hold onto.
So I think, despite the gauge showing the engine as cold, it is definitely overheating. The specialist thought it might be the thermostat? I have checked the oil and there is plenty there (it had a major service just before we left).
I have RAC European breakdown cover but before they recover it to a Land Rover Main Dealer, does anyone have any thoughts?
