Just pricing up a potential business and need some advice on the kitchen appliances. We would be selling milkshake like drinks that include lots of chocolate smeared around the glasses.

Could anyone in the trade advise if a glass-washer would be sufficient or if a dishwasher would be needed?

Thanks

R.

I might be able to help with this, although moving or reposting to food and drink might attract a bit more attention.

Essentially glass and dishwashers use the some fluid, dish wash and rinse aid, so should do the same job. However a glass washer tends to have a much shorter wash cycle and IME does not deal as well with fats (milk). We used to use one FOH for coffee cups, hot choc etc etc. In the end I made staff at lease rinse them in a sink before putting though the glass washer and the evening guys always drained and cleaned the glass washer before the evening because glasses came out smeary from the day use.

The other factor is the physical size of the machine and if they are FOH, the noise and steam.

Thanks Tony, It's the high throughput of the glass-washer that makes them ideal but I'm not sure if the glasses would come out clean..

IME in a glass washer you would need to mechanically (ie, scrub) the chocolate solids off first. In a full dishwasher you wouldn't. What sort of throughput do you imagine?

We ended up just buying more crockery and glassware as at peak times it just took too much time to wash everything. Cheaper to do that and then washup when it was in lower demand, over lunch and late PM etc

Thanks again Tony, might just buy more glasses as you state and save £1k on the dishwasher!
