I have a new domain and I want to be able to send and receive emails from that domain. Google is offering Google Workspace which includes all sorts of things that I don't need or want. It's just the email that I need. Any suggestions gratefully received.

1&1 (ionos.co.uk I think it's called now) is decent for a cheap email host

IMO Just choose between Google or Microsoft. I've use both extensively and slightly lean towards exchange ($4/5 per month) as seem to have more benefits than google.

Buy an email hosting package from one.com

Then you can use your own domain for any email address you like, eg anything@yourdomain.co.uk

I did the hosted email thing. Never again.

Exchange Online

Plan 1 is £3/mailbox a month. 50GB of storage.

It's actually insane when you think how cheap this is for what you get.

I wonder if you have to have a supported version of Outlook to access Exchange Online or if you can do it via a different client.

I think ActiveSync or pop3/imap (yuck) or webmail is fine but you need a 365 version of Outlook.

Might be wrong but I think Microsoft were moving that way for all Outlook access to 365 as they try and drop "boxed" products.
