I've been talking to some people about taking a full time job, in this country. They are based abroad (nonEC), and would like to pay me by simply sending me some money each month. They presumed that I would deal with tax NI etc in the manner of a self employed person.

Is this OK legally? The job is expected to last several years at least

TIA

If you are an employee and living and working in the UK (i.e. you are a UK tax resident) you MUST pay your tax under the PAYE system.
The usual way this is done in your circumstances is for the foreign based employer to appoint a UK agent to administer the payroll in the UK.

I used to do this for an American company that had one UK based saleman.

You are NOT self-employed and therefore cannot account for your tax on a self-employed basis.
