Does anyone know if its possible to sign up to a cashback scheme, while claiming the original £x/mth line rental as an expense and then still applying for the cashback without any problems? i.e. does the cashback need to be recorded on the co. books?

No-one know? Or is it just simple tax evasion?

The cashback will be from the retailer, but the bills from the network so I doubt anyone will even know if you were claiming cashback on a phone that was paid for via expenses.

I belive the cashback cheques will be made payable to the account holder so have to make sure it is in your name, not company name i guess.

Although I would guess if it is your own company then you would be participating in tax evasion. If its not your company the you are participating in fraud, and falsification of expses which is almost certainly gross misconduct.
