Extract Audio from DVD?
Discussion
One of the components that makes up Gordian Knot will definately do it, but probably not before copying the whole DVD onto your hard drive.
Alternatively, mencoder will definately do it, but it might take a lot of effort to get it working.

VirtualDUB (as long as you get the MPEG2 compatible version, that can read DVD vob files).
You can then save the audio as a WAV file and edit/cut at will with any audio editing software. Or edit the video to the section you want of audio and then save it, then you won't need to edit the WAV further.

Probably quicker to plug the audio output from a domestic DVD player into the Line-In on a decent soundcard, and do it "the old fashioned way!"
Often wondered about this - how much room would it use?
Do you just open media player and press record or something?
Not sure if media player will do it, but I have just bought a tape desk off eBay so that I can start to archive all my old audio tapes from way back - have some stuff that is impossible to get again - radio recordings etc. Hopefully it will be straight forward....

Get some decent audio recording software.... loads of freeware and shareware utilities about, but if you can, get something like Soundforge or Cool Edit Pro, and the process of archiving tapes, or recording the audio from a DVD is ridiculously simple.
