VPN - Folder access/security

I seem to be going round in circles so I thought I would ask your collective help.

I'm helping set up our companies VPN so that all the consultants can access work folders away from the office, this I have done.

Now, we have a file directory structure which we want to limit access to for various users, e.g. every member of staff has their own folder, so we just want access to that user and admin staff.

Using the sharing and security tabs all I can seem to do is allow access for all or none.

So, any tips/advice or can anyone point to a good site.
