Sony WH-1000XM4 Released
Discussion
Thought I would follow up on this and the first month of use.
After a couple of updates I was experiencing a series of disconnections at random and also stuttering audio when connected to my Mac. This pair ended up going back to John Lewis and replaced.
Opened the second set and they were DOA - returned and replaced again.
Third set, opened and updated and they also suffered from severe stuttering audio - tried this on numerous devices in case it was an issue with the Mac (doesn't do it with other devices I have but you never know) and it continued on my iPhone, works laptop (Thinkpad) and also with my PS4 - so they've been returned for a refund.
Shame as they were super comfy and very easy to wear for long periods of time but using them for video calls and having them randomly disconnect and refuse to reconnect along with severe stuttering (every 2 secs I'd lose about 0.25 secs of audio) made them unworkable - the ANC was awesome on a recent flight though!
No idea what to replace them with and have reverted to my trusty old, but wired B&O Form 2i

Thanks for following up, sorry to hear about all your issues.
I haven't actually used mine a huge amount, but I've really enjoyed connecting to the TV to watch films at a decent level while kids are in bed. I've listened to some music on my phone while cleaning the car which was a really nice experience, especially with the ANC making the pressure washer barely audible.
I wanted to use them with my PC for Skype calls but it seems I'll need a dongle that supports a more up to date Bluetooth 5.0
I also had quite a few issues with WiFi due to the 2.4ghz band being shared with both WiFi and Bluetooth, had to fiddle with my router to force 5ghz at all times to avoid constant disconnections / massively reduced speeds.
I've noticed some of the very brief drops/stutters in sound you mention but it's infrequent enough for me to not worry about.

Get yourself a pair of XM2's if you can find them. I've had mine since new and had zero problems. Comparing the sound and noise cancelling to my mate's XM3's and XM4's my old ( ish ) ears cant tell the difference. After a couple of updates I was experiencing a series of disconnections at random and also stuttering audio when connected to my Mac.
