You have lost me here. Why can’t you buy a new SIM card, on a pay as you go tariff, use that in the old phone, and put old SIM in new phone? You could just get a Giffgaff SIM preloaded with a certain value of data download, text, and call minutes. You can transfer any SIM to any provider you wish, just by transferring the SIM number to the new provider.
Are the phone numbers on the SIM?
Area your data files on a cloud storage (iCloud or Dropbox)?

Assume you’re on Android? One of the reasons I like iThings is that when I upgraded my phone, it just said “would you like to restore the old phone onto the new one” and it just worked,

To be fair if it is android and you followed the default setup procedure your phone should have backups stored somewhere, be it with Google or Samsung or whatever.

It's literally a case of put SIM in new phone, sign into your account, and follow the prompts to restore everything from your backup.

Of course if you don't know where your phone is backing up to, or if you disabled or declined backups then it's another story altogether.

A lot of android manufacturers have migration software to move data from one phone to another when first setting it up, either using a cable or by the old phone hotspotting the new one and transmitting the info over Wi-Fi.

But standard backups and just signing in and accepting a restore from the old phone is by far the easiest.

If you're going from one iPhone to another, you just put the new phone next to the old one after turning it on for the first time and it'll transfer everything across. If it's an Android phone then you can restore the new phone from a backup of the old phone as part of the setup procedure when you first turn it on.

When I bought a new Honor phone it used Bluetooth to automatically clone my old (non-Honor) phone. Data, Contacts. Apps., etc all transferred with no errors.

my experience recently

Pixel to Pixel works well
iOS to PIxel works well

I'm not sure how well other Android (samsung, huawei etc) to Pixel works, would imagine Samsung to Samsung works fine, not sure how Android to iOS works either.

When you log into the same android account it will ask if you want to install all your current apps

Its moved on in 3 years - Even if you say yes it still allows you to select/deselect them

New Samsung phones come with a USB adaptor thing that lets you backup to PC and restore from there, but Android seems to do a good enough job for me. Sign in on the same Google Account and it'll install your apps, backup WhatsApp to Drive and that's most of it.

I use ActionLauncher, I remember that being abit of a pain to setup last time, but it probably has it's own setting backup thing in now.

It helps if you have an SD Card that your photos and music are on though
