MacOS Safari out of sync

Anyone know how to reinstall Safari without a complete zap and reinstall of MacOS?

I was using Big Sur beta (v11.2), which was up to date but earlier today removed myself from the beta program and reinstalled Big Sur from App Store. All great except Safari won't run.

Finder said:

You can't use this version of application "Safari" with this version of macOS.

You have macOS 11.1. The application requires macOS 11.2 or later.

Google says to run Software Update, but it's already up to date so far as that's concerned.

Mostly happy to use Chrome, but rather have Safari available for the odd website.
I guess I could just wait it out until macOS catches up...

This is what I would do:

make sure your bookmarks are backed up
download + install another browser (OK, you're already on chrome)
use appcleaner to remove safari, or go through the terminal to delete (I have to google if doing this)
find a link to the preferred safari version + reinstall

Tried using terminal sudo, no joy:

'Operation not permitted'

I think it's got something to do with disabling system integrity protection in order to delete. I had to mess around with this recently after booting into recovery mode to disable it in the terminal. A quick google suggests others have had the same issue and have sorted the issue with a bit of poking around in the terminal. Have you backed up recently, just in case?
