Got to install a baby monitor which SWMBO has bought. I haven't looked at it in much detail yet but it looks like it works over wi-fi.

Wondering if it's worth hardwiring it to the router if that's possible? Heard too many stories of people hacking into the WiFi and watching remotely.

Presuming your WiFi is using WPA2 or 3 with WPS disabled and a decent length password, then unless the NSA want to take over baby care duties you should be fine from a security viewpoint.

Do people seriously go round speculatively hacking WiFi to see if there's a baby monitor they can watch?

If the baby monitor itself has hackable vulnerabilities in the firmware hardwiring it wont make a difference.

This is where most of the vulnerabilities have been in the past I believe.

Does that help much if it's connected to the router which has WiFi turned on?

Wifi isnt the attack vector, its the horrendously poor firmware on most baby monitors and other iot tat that is the attack vector, then once they are in they have access to everything else on your network, wired or wifi.
