One of our cars doesn't have android auto/carplay but does have bluetooth. On my google phone I use google assistant driving mode and the phone in a cradle is a pretty close interpretation of android auto, works great. Steering wheel buttons control the phone or voice controls work. However my wife has an iPhone and the closest equivalent I can see is driving focus mode which looks a bit rubbish. Most things are stopped for safety reasons such as messages.

Does anyone who understands the Apple ecosystem know what she can use? Would mostly be used for maps, either apple or google, needs access to control apple podcasts, music, calls and messages probably via siri. A carplay on the phone would be perfect, like google used to have an android auto app but in their wisdom got rid of for the inferior assistant driving mode.

Activate ‘Hey Siri’ in the settings menu.

It will pretty much do anything you need it to do via voice commands from there. Maps, messages, music etc.

This. I use Siri for dialling calls, sending messages etc. I have a Focus and the steering wheel buttons all work when it's linked to bluetooth.
