I've got some Xvid/Mpeg files which I want to stick on a DVD so they are watchable on a normal DVD player.

Sometimes a simple data CD will do the job, but many times it won't. How can I convert them into a proper DVD format which is universally recognised?

You can use something like the NeroVision thingy that comes with some versions of Nero, or AVIDemux2, or something else... those are the two that I've used in the past. Nero's much easier to get into, but if something doesnt work first time theres not a lot you can do about it, whereas avidemux is allmost the exact opposite - it takes you about three days just to get *anything* to work

DVD creating from various random sources is a whole universe of jargon, pitfalls and black magic regardless... lots of trial end error involved.

If you are willing to spend the money, Adobe Encore will reduce the "black magic" to almost nill...

There are basically only two types of DVD's:

NTSC or PAL.

You want PAL in the UK. All set top boxes play one resolution of DVD right now. There will not be HD-DVD's until the blue-ray HD-DVD war is over.

If you attempt to do a DVD with smaller resolution it will fill the screen with black OR will upconvert the media to standard resolution. Your DVD player is expecting it's stream in a specific size.
