I have an 8 port 1 GbE switch, and the spec sheet says it has a Switching Capacity of 16 Gbps and a Total Non-Blocking Throughput of 8 Gbps.

Does this mean it can do 1 Gbps on each of the 8 ports simultaneously? And if so does this mean if I use link aggregation on my NAS and plug both its ethernet ports in to the same switch, I could in theory have 2 different computers accessing the NAS at 1 Gbps simultaneously?

Yes that's correct. I think on that switch you need to use consecutive ports for link-agg and select Aggregation (LACP?) on the Unifi (cloud) controller.

LACP will take each "conversation" between a computer and the NAS and drop it onto one of the links in the link-agg.
