Looking at getting bigger ultrawide as an xmas pressie, currently 34" 3440x1440.
Will be a 40-45" with resolution of either 5120x1440 or 5120x2160

Just checking if the NUC is likely to support at a refresh of 100Hz or greater, specs aren't definitive:

3.2.4
Display Features
Multiple DisplayPort, USB Type C (Thunderbolt 4), and HDMI configurations feature the following
port designations:
• One HDMI, Two DisplayPort (DP) and Two USB Type C (1 front and 1 rear Thunderbolt 4)
• Each port individual standalone can support the following max resolutions at given frequency:
o HDMI: 3840 x 2160 @ 60 Hz
o DisplayPort1 (Back Panel): 3840 x 2160 @ 144 Hz; 7680 x 4320 @ 30Hz
o DisplayPort2 (Back Panel): 3840 x 2160 @ 144 Hz; 7680 x 4320 @ 30Hz
o Type C port (Front Panel): 3840 x 2160 @ 144 Hz; 7680 x 4320 @ 30Hz
o Type C port (Back Panel): 3840 x 2160 @ 144 Hz; 7680 x 4320 @ 30Hz

Want to sure before pulling the trigger.

Well, DQHD 5120x1440 is not far off the same pixel count as 4k 3840x2160 (10% less), so I'd says that you're likely to only see the 144hz at that resolution, and more likely to see 60-80hz with the 5k 5120x2560 (as it's about 1.75x the 5120x1440 resolution).

Of course this will all depend on what the iGPU can support, or what the NUC GPU drivers have been told to support.
