Contacts appearing / disappearing

This is driving me insane, and makes zero sense.
Over the last year or two, and with no pattern or consistency, my mobile phone contacts keep changing. I "gain" some contacts of my sons (not all) and lose existing ones (not all). This happens a few times in succession, I delete and re save but it then happens again, with the same contacts added and lost. Then it will be fine for months on end, before happening again a few times in a row. I have this in both my phone contacts, and then also in Whatsapp where it gets even weirder. I have one old contact that I cannot delete, they don't appear on my contacts list and haven't done for ages but I can't get rid of them - plus existing contacts drop off where their name becomes an unknown number.
I have ensured no synchs are on, but it is getting to the point that it is causing me real issues. It is so random, but happens to the same contacts each time.
Any ideas?
