I am plagued by SPAM (as we all are). I used to sort it by having the inbox display the intended recipent, so that all of the speculative info@whaetver.co.uk emails would be sorted from the fred@whatever.co.uk emails. I could then just sort the inbox and delete everything except the 'Fred' ones.

I changed PC and now can't see that information on the intended recipient but I am guessing it is an option to view, but can't just find it.

Does anyone know how I get that information back?

Haven't got it in front of me but it's something like view, column chooser, drag the 'to' field up with the rest.

Ps - you could get this done automatically for you by creating a few folders and playing around with the rules wizzard (tools/rules wizzard)

View - Current View - Customize Current View - Fields, select 'To' in the left-hand column then click 'Add'.

That's for Outlook 2007, other versions will likely be very similar.
