mp3s should play out of the box.

sudo apt-get install vlc

or

sudo apt-get install xmms

Should install a player and the codec packs if they arent already installed...

The vlc package will have dependancies, one of these I believe is the mp3 package.

xmms as I remember is the linux implementation of winamp but coded by the open source community rather than nullsoft.

I've not used xmms but fiddled with xmms2

The one that I use the most was mpd as its a daemon with loads of different front ends.

Whats confusing is that on fresh install Totem should play mp3 files.

Dunno to be honest, dont have an iPod

However, as OSX is Linux + some other stuff then there must be a Linux distro version of iTunes.

Err, OSX has very little to do with Linux. The kernel is based on the MACH microkernel, with the BSD sub-system incorporated;

www.kernelthread.com/mac/osx/arch_xnu.html

Many Linux utililities have been ported, but that no more makes OSX into Linux than it does my Sun, which also runs XMMS....
