Sorting photos on iphone

On my PC I organise my photos into separate folders within a folder called Albums (these are my folders and nothing to do with windows). In itunes I tell it to sync photos from Albums and select "all folders" (rather than "selected folders") so all my photos within the Albums folder are synchronised, and this works - all photos are added to phone.
On my PC I can sort photos in each of the folders (let's call one of them Holiday) within Albums in any way I choose - Name, Date taken, Date created, Date last saved, etc. I've got them sorted by Date taken and this is how I want them odered on my phone. After the first sync this was fine but as I've added photos to Holiday and re-synchronised with my phone it is no longer the case. It seems that it just organises the new photos and adds them after the existing ones.
I've tried deleting all sync'ed photos off the phone (through itunes) then deleting the "ipod photo cache" folder from Albums and then resynching but this results in the same. I've tried deleting the backup of my phone which itumes saves onto my PC but this doesnt help. On my PC I changed the name of Holiday to Holidayx and this did work - photos now ordered by date taken
But I'd rather not have to think of a new name for Holiday every time I want to add some pics to it.
I can only think that there is a backup file of some description on either my phone or PC (which is saved in neither the ipod photo cache or the backup folder) which remembers the order of Holiday.
