I'm not sure if this should go in the computers or music forum, so I'll let the MODS decide.

In the meantime, can anyone help me with iTunes?

The folder that contains my iTunes files has an enormous number of files, because iTunes creates a unique folder for every artist. Since I have a large number of "various artist" style collections, that means that I have a large number of folders that contain one file. I want iTunes to create folders for artists, but for various artist collections have iTunes create a folder for the collection itself. That would make the iTunes folder browsable by artist, without having the primary artists drowned in an ocean of folders that contain a single file. Possible?

Not quite fully sure I understand the latter half of your desire, but the former is resolved or depends on if you have the "part of a compilation" box ticked in the Info tab of the Get Info panel.
Doing that creates a folder labelled 'Various', and within that are the various albums that are flagged as compilations.

You can highlight all the different artists in the compilation album, and as above, right click, and mark the ALBUM artist as 'various'. Also click the album as a compilation in options, and you're good to go.

Slightly related, is there anyway of not having iTunes create a copy of your music folder into "iTunes music"? Its not like I'm short of HDD space, but having 2 folders with the same contents in (the iTunes one is worse, loads of 1 artist folders as the OP) kind of irks me.

Windows 7, if it matters?

When you first setup iTunes, you should deselect the option for iTunes to copy music to iTunes folder. You can do it in the iTunes preferences.
