iPod Touch 8gb vs 32gb

My 80gb iPod Classic went to iPod heaven yesterday. I had all my music collection on it, but realistically, only ever listened to a small portion of that. It was used in the car, in the kitchen radio, and sometimes while walking about.
I'm looking into replacing it, and I thought about going for an iPod touch. I've seen that people say the 8gb Touch is only 2nd Generation still, whereas the 32gb is 3rd Generation. I could get an 8gb, but i'm not sure if I can stretch to a 32gb one, besides for that money, i could get a new 160gb classic.
Has anyone used the 8gb and 32gb side by side? will I really end up with old tech and want to buy the bigger one anyway if i get the 8gb?
I think i can live with the small storage space for music, but having never had an iPod touch or iPhone, I really dont know what to expect from the apps or user experience or anything. Is the 8gb a good starting point.
Also, I have a Nokia E71 with an unlimited data plan, does anyone know if I can make this into a wi-fi access point for the iPod Touch?
