I recently replaced my old HP laptop with a new Toshiba one.

The quality of burned CDs is noticably poorer than it used to be, with levels changing dramatically between one song and the next. I'm constantly adjusting the bass and treble to get a reasonable sound.

Any ideas what the problem could be?

The only difference is I'm now using Itunes to burn my discs, whereas before I used Windows Media Player.

Have you got iTunes set to equalise levels? (Preferences... Playback... Sound Check)

Media player - Tools, Options, Burn Tab. Apply volume leveling across tracks.

See if that helps.
